Quick classes on knives, garnishes and more start March 15 in Cody

P O W E L L, W y o. - Food service employees and individuals who enjoy cooking can learn about knives, garnishing and quality service in three quick noncredit classes offered several times in March and April at the Northwest College Cody Center for Training and Development.

Linda Rogers will teach the three-hour Knife Knowledge, Knife Skills class three times during the month in morning sessions (9 a.m.-noon) on Saturday, March 15, and Thursday, March 27, and at 6 p.m. Wednesday, March. 19. She'll start the classes by identifying the qualities of a superior cooking knife and then demonstrate how to use them - words like julienne and chiffonade lose their intimidating effect in the hands of a knowledgeable knife handler. Participants should bring their own knives so they can practice as they learn. Cost is $35 per person and includes food supplies.

The Fun of Garnishing, another three-hour class, will also be offered three times - from 9 a.m.- noon on Saturday, March 29, and Thursday, April 3, and at 6 p.m. Wednesday, April 2. In these classes, Rogers will show how much fun can be had by ignoring your mother's admonition not to play with your food. She'll talk about the tools needed to create most garnishes and have examples for participants to practice with while they make orange baskets, firecrackers and other enticing edibles. Participants are asked to bring any garnishing tools they have or at least a sharp paring knife. Cost is $35 and includes food supplies.

A five-hour Refresher Course On Restaurant Service will be offered from 10 a.m.- 3 p.m.on four Mondays, March 17 and 31, and April 14 and 28. According to industry surveys, service is the number one reason people choose to return to a restaurant or dine elsewhere. This intense course, also taught by Rodgers, is designed to cover all aspects of hospitality and great service. It covers the principles, standards and practices outlined by the Culinary Institute of America. Rogers recommends it for beginner and seasoned servers alike. Cost is $30 per person and includes a light lunch.
